Most home stir-fries lose their crunch the moment everything hits the wok — vegetables wilt, noodles go soft, and the whole dish turns into one uniform texture. Water chestnuts are the fix. They hold a genuine, audible crunch even after cooking, which is exactly what a good stir-fry needs to feel alive. Here's how to use them properly, in a noodle stir-fry built to show off that crunch.
Why Water Chestnuts Work
Ukemochi Water Chestnuts are a corm (an underground stem, not a nut), and their high water content combined with a dense cell structure means they stay genuinely crisp through cooking, stir-frying, even a quick simmer — where onions, carrots, and cabbage all soften. That contrast is the entire point: a bite of water chestnut against a bite of tender noodle is what makes a stir-fry interesting instead of monotone.
Water Chestnut & Udon Stir-Fry
What you need
- 140g Ukemochi Water Chestnuts, drained and rinsed (about 8–10 pieces)
- 250g Ukemochi Ayahikari Wheat Udon Noodles (1 pack)
- 80g carrot, julienned into thin matchsticks
- 100g cabbage, thinly sliced
- 2 spring onions (about 20g), sliced diagonally
- 6g garlic (2 cloves), minced
- 15ml (1 tbsp) neutral oil
- 15ml (1 tbsp) light soy sauce
- 10ml (2 tsp) Pantai Chili Oil
- 5ml (1 tsp) sesame oil
Method
- Bring a pot of water to a boil and cook the 250g udon noodles according to the pack instructions (usually about 2 minutes). Drain and set aside.
- Drain the water chestnuts and pat them dry with a paper towel — dry surfaces stir-fry better than wet ones. Slice each one in half.
- Heat 15ml oil in a wok or large frying pan over high heat until it just starts to shimmer.
- Add the 6g minced garlic and stir constantly for 15 seconds until fragrant — watch closely, it burns fast.
- Add the julienned carrot and sliced cabbage. Stir-fry for 2 minutes, tossing constantly, until just starting to soften but still crisp.
- Add the halved water chestnuts and stir-fry for 1 more minute — just enough to heat them through without softening their crunch.
- Push everything to one side of the pan, add the drained udon noodles to the empty side, then pour the 15ml soy sauce and 10ml chili oil directly over the noodles.
- Toss everything together for 1–2 minutes until the noodles are evenly coated and heated through.
- Turn off the heat, drizzle with the 5ml sesame oil, scatter the sliced spring onions on top, and toss once more. Serve immediately, while the noodles are hot and the water chestnuts are still crisp.
