Cooking Instructions

  1. Boil the Noodles: Bring a large pot (at least 1.5 liters) of water to a rolling boil. Add the 100g of udon noodles and stir gently to prevent sticking. Boil for 8–13 minutes (or according to package directions) until they reach your desired chewiness.

  2. Rinse and Cool: Immediately drain the noodles into a colander. Rinse thoroughly under running cold water for at least 2 minutes to remove excess starch and lock in the famously chewy texture.

  3. Prepare the Broth: In a separate pot, mix your mentsuyu concentrate with hot water as directed for hot udon soup. Bring the broth to a gentle simmer and keep it hot.

  4. Reheat Noodles: To serve hot, place the cold, rinsed noodles back into a strainer and dip it into a pot of fresh hot water for just 10-15 seconds to warm them through. Drain well.

  5. Assemble and Serve: Place the warmed noodles into a serving bowl. Pour the hot broth over the noodles. Garnish generously with chopped green onions and a sprinkle of Shichimi Togarashi. Serve immediately.
